M\u00e9langez le tout dans un petit saladier en ajoutant le sel de mer et le sucre. D\u00e9posez les flancs de saumon c\u00f4t\u00e9 peau sur le film alimentaire et saupoudrez g\u00e9n\u00e9reusement du m\u00e9lange de sel. Emballez les morceaux de saumon dans le film alimentaire et laissez-les reposer quelques heures au r\u00e9frig\u00e9rateur. Retirez le film alimentaire et rincez le poisson \u00e0 l&rsquo;eau froide. Essuyez bien le poisson avec de l&rsquo;essuie-tout. Laissez reposer le poisson sur de l&rsquo;essuie-tout pendant 30 minutes \u00e0 temp\u00e9rature ambiante hors du r\u00e9frig\u00e9rateur. Allumez entre-temps le four de mijotage. Placez les flancs de poisson c\u00f4t\u00e9 peau dans un sac \u00e0 fumer. Fermez le sac et pliez en deux les coins du sac. Faites chauffer le sac pendant 60 minutes sur un plat \u00e0 four dans le four \u00e0 mijoter. La faible temp\u00e9rature constante du four \u00e0 mijoter va chauffer uniform\u00e9ment le poisson durant les premi\u00e8res 30 minutes jusqu&rsquo;\u00e0 60 \u00b0C, puis 30 minutes jusqu&rsquo;\u00e0 80 \u00b0C. La dur\u00e9e de cuisson d\u00e9pend de l&rsquo;\u00e9paisseur et du poids des morceaux de poisson. Sortez le sac \u00e0 fumer et laissez-le reposer ferm\u00e9 pendant 10 minutes. D\u00e9coupez le haut du sac et laissez la vapeur s&rsquo;\u00e9chapper. Retirez le film et servez le poisson ti\u00e8de ou froid. <em>*Attention : le sac \u00e0 fumer a une face sup\u00e9rieure et une face inf\u00e9rieure particuli\u00e8res.
